Looking for a stunning and simple main dish for your Passover table? This roast turkey is juicy, full of flavor, and easy to prepare with just a few fresh ingredients. Whether it’s your first time roasting a turkey or you’re a seasoned holiday host, this recipe will make you feel like a pro.

Ingredients

  • 1 turkey (about 12 pounds)
  • 2 tablespoons lemon juice
  • 1/3 cup extra virgin olive oil (EVO)
  • 2–3 shallots
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder (click here for recipe)
  • 1 teaspoon dried thyme and rosemary or 6 fresh sprigs if using fresh herbs

Steps

Preheat oven to 350°F (175°C).

Rinse turkey inside and out, then pat dry thoroughly with paper towels.

Place turkey in a roasting pan.

In a food processor, blend olive oil, lemon juice, shallots, and fresh herbs (if using) into a thick paste.

Add salt, pepper, and dried herbs (if using) to the mixture.

Rub the paste all over the turkey, including under the skin for extra flavor.

Cover turkey loosely with foil and bake for about 15 minutes per pound — approximately 3 hours for a 12-pound bird.

For golden, crisp skin, uncover and baste periodically during the last 45 minutes of baking.

Let the turkey stand for 20 minutes before carving to allow juices to redistribute.
