If you’re looking for a delicious treat that’s easy to make and perfect for Passover, these simple almond cookies are a must-try. With just three basic ingredients (plus a pinch of salt), they fit beautifully into even the most traditional Passover kitchen.
Many families follow a custom of using only a few pure ingredients during Passover — avoiding anything processed or overly complicated. That’s exactly why I love this recipe. It’s pure, simple, and satisfying.
Ingredients
- 3 cups finely ground almonds
- 1 cup sugar (feel free to reduce to 1/2 cup for a less sweet version)
- 3 large eggs
- Pinch of salt
Steps
1
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2
In a mixing bowl, combine the ground almonds, sugar, and salt.
Add the eggs and mix until a sticky dough forms.
3
Scoop small spoonfuls of dough and roll into balls. Place on the prepared baking sheet.
Gently flatten the tops with the back of a fork or spoon.
4
Bake for 12–15 minutes, or until the edges are lightly golden.
Let cool completely before storing in an airtight container.
Tip:
These cookies freeze beautifully and are a perfect make-ahead dessert for your Passover menu. Serve them with tea, or as a sweet finish to your Seder meal.
Simple, sweet, and satisfying — this is one Passover cookie recipe you’ll come back to every year!
